The Basics

What Is Hosomaki?

Hosomaki means “thin roll”. It is the smallest format in sushi: a single ingredient at the centre, a thin layer of seasoned rice around it, nori on the outside, rolled and cut into six pieces about the width of a thumb.

With only one filling there is nowhere to hide, so hosomaki is judged on the quality of that one ingredient and on the rice. It is also the traditional palate cleanser — a cucumber roll between richer courses resets the mouth.

Hosomaki, futomaki or mini maki? Hosomaki and Mini Maki are both thin rolls cut into 6 pieces. Futomaki is the thick roll, several fillings, cut into 5 larger pieces. All three can be ordered as a témaki hand roll instead.
