The Ingredient

What Is Unagi?

Unagi is freshwater eel, one of the most prized ingredients in Japanese cooking. Unlike most sushi toppings, it is never served raw: the eel is butterflied, grilled over high heat and brushed with tare, a sweet-and-savoury soy glaze, until the outside caramelises and the flesh turns silky and tender.

The result is rich, gently smoky and a little sweet. It is one of the easiest ways into Japanese cuisine for anyone who is not ready for raw fish, and a long-standing favourite of seasoned sushi lovers.

Unagi or anago? Unagi is freshwater eel, fuller and richer in flavour. Anago is saltwater sea eel, lighter and more delicate. Both are always served cooked.
